"Peanut" chicken (sun butter)

been a while, I know.

I cooked today!  Which is Paulette speak for making something without actually measuring.

So for today's fun, I used:
approx 1 tsp sesame oil

approx 1/4 cup sun butter

approx 1-2 tsp soy sauce

approx 1 TBS chopped pickled ginger

approx 1/2 tsp mince garlic (I used the jar stuff, cuz I like it)

A little sugar, since the sunbutter isn't the same kind of sweet as peanunt butter

grind of pepper/salt

4 chopped chicken thighs

sprinkle of corn starch

vegetable oil for frying

I started, of course, by looking up a recipe.  Since I've never made peanut chicken.  
Found one that looked promising.  Tore apart the pantry looking for hoisin sauce, which I didn't have.  So I said forget that (not really, I was coarser).  And went with just soy sauce.  Since I didn't have teriyaki sauce either.  sigh.  

I chopped up the 4 chicken thighs, and set them aside. 

I put the sesame oil into a bowl, then added the soy sauce.  then emptied the remnants of the jar of the sun butter into the bowl.  then scooped a smidge of garlic into the mix.  then stirred that up.  It was very weird looking, then it came together nicely.  I then realized I wanted some ginger, so grabbed the jar of pickled ginger and grabbed a couple bits of that and diced it nicely.  then added it to the mix.  Oh, added a smidge of water to make it more pourable.  Tasted it, and decided it needed a lil sugar.  So I added that.  Did a couple grinds of salt and pepper in.  Not much.

Next, I heated some oil in a lil pan and started cooking my chicken.  LOL then realized I needed a bigger pan, and moved everything over to the bigger pan.  Cooked that until it was done, and sprinkled a lil cornstarch on, to thicken, if it needed it.  And what's an asian dish without corn starch?  

Then I added my sun butter mix and stirred it into the chicken.  Again it looked weird, and then it smoothed out.  Really cool.  I tasted it, added a bit more sugar, and then cooked some rice and served the chicken over that.  

I liked it.  John liked it.  I think this was a win.
